Select a photo in iOS’s Photos app, tap Edit, then the crop button at the bottom. As you drag the crop boundaries, Photos will automatically zoom in on the image to give you the best view and make fine-tuning your crop much easier.

[Note: I have no idea why YouTube is mangling the aspect ratio of this video; it’s been stretched wide so the iPad looks a little chubby. I’m looking into it.]
