Lifehacker has a great roundup of all the useful features you can find in Settings > General > Accessibility. You can create custom gestures, unique vibration alerts for specific contacts, and even lock your device to a single app and disable hardware buttons, which is incredibly useful when handing devices to kids or suspicious friends and coworkers.
